Gulpener sugar beet vinegars

by Nancy Kalajian

Produced in Limburg, Holland, since 1825, Gulpener vinegars are made from sugar beets, an ingredient common in European distilled vinegar. The strong Dutch Sugar Beet Vinegar ($4) can be used to make dressings and sauces. The Spiced Sugar Beet Vinegar ($4.50), flavored with herbs -- including lovage, sage, rosemary, and thyme -- can be drizzled on salads or vegetables. Bottles (500 ml) can be ordered by mail from Culinary Imports. Call 1-800-958-7678, and ask for Department R. Shipping and handling charges start at $4.75.
