An Iranian, a New Yorker, and a Russian Jew walk into a recording studio. The engineer says, "Why the long songs?" No, it’s not a non-joke joke; it’s what we like to think went down last year when Bay Area trio the Ebb and Flow entered the studio with Aaron Prellwitz (Neil Young, Erase Errata) to record their first full-length. Time To Echolocate (Three Ring) opens with a nine-and-a-half minute two-part epic that sets the eclectic tone for the rest of the disc — a stew of ’70s-influenced stoner guitar rock peppered with psychedelic Farfisa, jaunty synth pop (Bob Moog makes a spoken-word cameo on the last track), lo-fi indie morass, and vibes-and-trumpet-driven twee pop. The traditional Pig Pickin’, a Southern barbecue and fundraiser at Redbones for the Somerville Homeless Coalition, takes place tonight from 6 to 9 p.m., in front of the restaurant. The meal includes slow-smoked pork pulled off the bone, along with all the fixings, for $20 per person. For reservations, call 617.628.2200. Barbecue is what Redbones is all about, and the Pig Pickin’ gives diners a glimpse at the process. True barbecue is slow cooking over low heat for a long time — often involving a whole animal, and frequently a pig. For this event, a pit master from Redbones will fire up the portable smoker early Monday morning and slow-smoke a couple of pigs until they’re ready for pickin’ hours later. Stop by anytime for a chat with Redbones’s pit master.

If August isn’t hot enough for you, you might want to add a little black-pepper powder, or kali mirch, to spice it up. Come to the monthly meeting of the Spice of the Month Club at Tamarind Bay, where chef Wali Ahmad gives diners a mini spice course, uses the featured spice in a meal, and sends everyone home with a spice sampler and recipe booklet. The price is $25 per person, and the events are held the second Monday of every month; this month’s club is tonight. While you’re at it, note that Zagat gives Harvard Square’s Tamarind Bay the same food rating as it does Danny Meyer’s Tabla in NYC. Hot stuff.

Classes don’t thrill us much, but a Class in a Glass? That we could get into. Tonight, Piattini (162 Columbus Avenue, Boston) presents the latest installment of its educational wine-dinner series, Class in a Glass, this week featuring dessert wines. On August 15, the class will cover Tuscan wines, followed by California wines on August 22. The cost is $40 per class (or a package of four classes for $140), and classes begin at 6 pm. Provincetown Theatre Company continues a revival of Pulitzer winner Paula Vogel’s The Baltimore Waltz, which she wrote as a tribute to her brother Carl, who died of AIDS in 1988. Patrick Falco directs the Obie-winning work, in which an elementary-school teacher who has acquired a mysterious disease from toilet seats is accompanied by her brother Carl as she travels through Europe in search of a cure.
